The Game Dev Tycoon was already released for PC and iOS/Android. I think is totally possible to support the Switch, since it have the touch-screen. I think support the gamepad is not difficult at all.
At this time doesn’t have any tycoon game realeased for Nintendo Switch, maybe the GDT can be the first one. 
I don’t know how complex it can be and how expensive it is, but many games for mobile are comming to Switch.
